Kielbasa with Sauerkraut and Dumplings

Any leftover kielbasa and sauerkraut can be used to make Kielbasa and Sauerkraut Sandwiches.

2 Tbsp. Butter
1 pound Kielbasa, cut into serving size lengths
1 pound package of fresh sauerkraut, or canned (if you like a lot of sauerkraut, add more)
1 recipe Dumplings

Melt the butter in a stainless steel saucepan, add the Kielbasa and cook over low-heat until the sausage is nicely browned. Watch carefully so it does not burn. Add the sauerkraut around the Kielbasa. Stir the sauerkraut so it picks up the Kielbasa flavors from the bottom of the pan. Add water so that the sauerkraut does not burn while cooking the dumplings.

When the sauerkraut liquid comes to a boil, drop the dumplings by spoonful to the top of the sauerkraut. Cook 10 minutes uncovered, then 10 minutes with the pan covered. Dumplings should be puffed and light.
