Quinoa & Celery Salad - Copycat recipe
from https://dietitiandebbie.com/

This quinoa and celery salad is a fan-favorite among Costco shoppers, but you can easily make it at home with this recipe! Finely chopped kale is tossed with quinoa, celery, almonds, and cranberries then tossed in a simple apple cider vinaigrette. Great for lunch whether you are packing for the office or working from home.

[Note: The salad from Costco also has bulgur in it.

Salad Ingredients
1 cup quinoa [original also has bulgur]
2 cups low-sodium vegetable broth
2 cups chickpeas (rinsed and drained)
4 cups kale (finely chopped)
2 cups red cabbage (shredded)
1 1/2 cups celery (diced)
1 cup carrots (shredded)
1/2 cup red onion (minced)
1/2 cup dried cranberries
1/2 cup slivered or sliced almonds

Apple Cider Vinaigrette Dressing
1/2 cup olive oil
1/4 cup apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon maple syrup
Salt and black pepper (to taste)

Cook the quinoa in vegetable broth for 12 to 15 minutes until tender, then let it cool slightly.

Whisk the dressing ingredients together in a small bowl or shake them in a jar.

Combine the cooked quinoa, chickpeas, kale, red cabbage, celery, carrots, red onion, cranberries, and almonds in a large bowl.

Pour the dressing over the salad and toss well to coat.

Let the salad rest for 10 minutes or chill it in the fridge so the flavors build.
