Caesar Salad Dressing
This dressing is also good on sandwiches, such as Grilled Chicken Caesar Wrap. Also see the recipe for Caesar Salad which claims to be very close to the original version of the salad and uses raw eggs and oil in the dressing instead of the mayonaise.
Note: If you add parmesan cheese to the salad, you may not want to add it here as my salad was salty and I did not add salt to the dressing.
1/3 cup mayonnaise
1 Tbsp. olive oil
3 Tbsp. water [This is too much. Start with 1 or 2 Tbsp.]
1 medium clove garlic, pressed [definitely medium size, large is too much]
8 anchovy filets (we use 6 filets)
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
2 tablespoon lemon juice (fresh is best)
1 teaspoon fresh ground black pepper
1 teaspoon coarse ground salt (omit - anchovies and cheese are salty enough)
1/4 cup grated parmesan cheese
Place all ingredients together in a blender and blend until smooth.
