Strawberry Vinaigrette

There many different Strawberry Vinaigrette recipes on the Internet. Some use fresh strawberries, others use strawberry vinegar, and yet others use strawberry jam as the base. Here is a mix of recipes to choose from, some of which come from salad recipes on my website. I did not include any that use strawberry vinegar as this is expensive unless you make your own.

Made with Strawberry Jam

*Strawberry Vinaigrette

FMM: I modified this recipe to the measurements below. I used red wine vinegar. We used it for my spring version of Winter Greens Salad w/ Oranges & Goat Cheese made with spring greens and strawberries at Easter. Everyone thought it went well with the radicchio, spring greens and fresh strawberries in the salad.

3/4 cup olive oil
4 tablespoons strawberry jam
4 tablespoons apple cider vinegar [or red wine vinegar]
1 tbsp dijon mustard
¼ teaspoon salt
⅛ teaspoon black pepper

Combine the ingredients in a blender and pulse until well combined. Store in the refrigerator for up to two weeks.

Made with Fresh Strawberries

Strawberry Vinaigrette with Poppy Seeds

8 oz strawberries, fresh or frozen thawed
2 tablespoons honey
1/4 teaspoon sea salt
1/4 teaspoon ground black pepper
2 tablespoons apple cider vinegar
2 tablespoons olive oil
1 tablespoon poppy seeds

Put the strawberries, honey, salt and pepper in a blender and blend until smooth. While blending, gradually add the vinegar and olive oil in a steady stream. Process until thickened.

Gently stir in the poppy seeds and serve.

Store covered in the refrigerator. The ingredients can separate while it sits, so I like to store it in a salad dressing shaker, so it's easy to give a quick shake and serve.
