Beef & Whole Wheat Spaghetti Salad
Brian made a cold beef and whole wheat spaghetti salad years ago and it was very good. We don't remember exactly what was in it except that he used an Italian dressing. I believe he got the idea from Whole Foods which has several pasta salads in their deli section. The combination of the whole wheat noodle and the beef made it. This recipe could be very similar.
1/2 pound whole wheat spaghetti
leftover beef, julienned
1/2 c. finely chopped parsley
1/4 c. chopped green onion
1 lg. tomato, peeled, seeded and diced (could use grape tomatoes, cut in half)
1/4 c. diced green pepper
1/4 c. lemon juice
1/4 c. olive oil
1 tsp. salt or to taste
1/4 to 1/2 tsp. black pepper
1. Cook spaghetti in boiling salted water about 5 to 8 minutes. Drain and rinse under cold water. Drain thoroughly.
2. Turn into large bowl. Stir in parsley, green onions, tomato and green pepper.
3. In separate bowl, mix lemon juice, oil, salt and black pepper. Pour over pasta mixture, mixing well. Cover and chill.
4. To serve, garnish with lettuce leaves and tomato wedges or lemon and lime slices if desired.
