Cuban Sandwich

Comment from a reviewer of another reipe: I am Cuban. In Cuba, there is no such thing as a "Cuban" Sandwich. The origins can be traced back to immigrants to the Tampa area, but Miami still fighting for the honor. A real Cuban Sandwich does not have anything but, roast pork, ham, swiss cheese, and dill pickles (not sweet). It is usually with mustard but some like to add mayonnaise. The pork is roasted after being marinated in Mojo for 12 to 24 hrs. Pork is then sliced. Thickness usually is about a 1/8 of an inch. Same with the ham, although I have seen it "shaved". Pork needs to be sliced not shredded. And adding mojo as a dressing is just not done. On the pork, as this is crucial, do not use pork loin. It is too lean and you need the fat. In some delis, you can even buy roast pork as you do ham, but it is not the same. The other key component is the use of Cuban Bread. Don't worry too much, as this delicacy is not available everywhere, so you can use Italian hoagie rolls or even French bread. The deliciousness is what is inside. Don't take shortcuts else you'll end up missing a real treat.

1 loaf Cuban bread
1-ounce regular mustard
4 dill pickles
5 slices boiled ham or Virginia ham
2 slices roast pork
1 slice imported Swiss cheese
1-ounce butter

Cut Cuban bread to desired size, common size is 7 inches. Next, slice open the bread down the middle. On the topside of the bread spread 1-ounce of mustard, evenly across. Then place 4 pickles on top of the mustard. You then place 1 slice of Swiss cheese on top of the pickles. Slice ham to desired thickness, recommended size is 1 1/2 ounces per slice, the thinner the better. Now fold each slice of ham in half and place evenly on bottom of bread. On top of the ham, place slices of roast pork, 1 1/2 ounces per slice. You then join both halves of the sandwich. You are now ready to grill your Cuban sandwich.

Use a sandwich grill if you have one, a waffle iron if not. Spread butter on top of the bread evenly. Close the grill, smashing the sandwich. Leave sandwich in the grill until top of bread turns to a golden brown, and top is crisp. Approximate time is 4 to 6 minutes. After the sandwich is crispy and the cheese has melted, remove the sandwich carefully and slice it diagonally, from corner to corner.

Another way to make this sandwich is to grill it in a cast iron fry pan (like a grilled cheese sandwich) using another cast iron fry pan as a weight. Flip the sandwich over after the bread has become brown and crispy to brown the other side.
