Reubens
Traditionally, Reuben Sandwiches are served with a large dill pickle slice on the side.
Rye or pumpernickel bread
Coarse-grain prepared mustard
Corned beef slices
Swiss cheese slices
Sauerkraut, drained
Russian dressing
Butter for grilling the bread
Spread mustard on one slice of bread, then layer the corned beef, the cheese, and sauerkraut on top. Spread the other slice of bread with Russian dressing and place on top. Butter the outsides of the bread.
Preheat a cast iron or other non-stick skillet over medium heat. Place the sandwich in the skillet, cover with a lid so the cheese melts and the meat and sauerkraut heat, and grill until lightly browned. Flip with spatula, cover with lid and brown the other side. Remove, slice in two diagonally and serve.
Note: You could also bake the sandwiches in a 450 degree oven for 4 - 6 minutes.
