Reuben Dogs
I've seen several recipes for Reuben Dogs. Some leave out the Swiss cheese that is in every Reuben, other add pickles or cole slaw instead of sauerkraut. This is my take on this recipe.
Hot dogs
Hot dog buns
Swiss cheese, thinly sliced
Sauerkraut
Coarse-grain prepared mustard
Russian dressing
In a small saucepan, heat the sauerkraut over medium heat.
In a medium skillet, bring about 1 inch of water to a boil. Add the hot dogs and parboil.
While the sauerkraut and hot dogs are heating, make the Russian dressing.
Brown the hot dogs on the grill. Leaving the top and bottom of the hot dog buns attached, place a slice of Swiss cheese in the buns, covering both the top and the bottom of the buns and place on the side of the grill to toast. You don't need to completely melt the cheese because the residual heat from the hot dogs melt it further.
To assemble the Reuben dogs, place a grilled hot dog on top of the cheese in the bun. Spread some mustard on the hot dog and top with heated sauerkraut. Drizzle as much Russian dressing on top as you like.
