Ham Salad Sandwiches

Ham Salad

Also good as a spread for crackers or a filling for tiny cream puffs to be served as hors d'Ouerves.

Cooked ham
Minced sweet pickle or pickle relish (adds a little sweet taste that compliments the ham)
Mayonnaise (add just enough to hold the salad together)
White or Wheat bread, Rye bread, hamburger roll, croissant
Butter
Lettuce leaves, or fresh alfalfa sprouts

Mince ham in processor or food grinder until finely minced, then place in a mixing bowl. Add mayonaise a little at a time until the minced ham starts to hold together. Add pickle relish to taste. The sweetness will cut the saltiness of the ham.

Spread 2 slices of bread with butter, spread the ham salad on 1 slice, and add a lettuce leaf or alfalfa sprouts. Top with a second piece of bread. Cut in two diagonally.
