Baked Beans w/ Apple Cider

This recipe originally called for cranberry juice which proved to be a bit tart for my taste. I have subsituted apple cider or juice instead.

1 1/2 c. dry pea or navy beans
1 1/2 t. salt
2 c. apple cider or juice
2 c. water
1/3 c. chopped onion
1/4 c. catsup
2 T. brown sugar
2 T. molasses
1 t. dry mustard
1/8 t. ground ginger
1/4 lb. salt pork

Pick over the beans removing any stones and other debris. Wash and let drain. Mix beans, salt, juice, and 2 cups water in saucepan. Cover and bring to boil; boil 2 minutes.

Remove from heat; let stand covered 1 hour. Cover and simmer till tender, about 1 hour. Drain beans, reserving liquid.

Combine beans with onion, catsup, sugar, molasses, mustard, and ginger.

Pour half the bean mixture into 2-quart bean pot; top with half of pork; repeat layers. Add 1-1/2 cups reserved liquid.

Cover; bake in 300º oven for 5 to 7 hours. Add more liquid as needed. Serves 6 to 8.
