Mom's Criss-Cross Potatoes

Criss-Cross Potatoes

One of Jane's favorites, and one of mine, also. Mom used to make these every so often.

2 to 3 raw baking potatoes (enough for one meal)
oil, butter, or margarine
paprika

Wash potatoes and leave skins on.

Cut potatoes in half, lengthwise. Make 1/4 inch diagonal cuts with a knife across the raw side of the potato half, in a criss-cross pattern.

Place in a baking pan cut-side up.

Bake in 350 degree oven for 15 minutes.

After 15 minutes, coat cut side of potatoes with oil, butter, or margarine. [I’ve always used butter, for the flavor, but any of the three would work.] Sprinkle on paprika.

Bake additional 15 minutes, or until brown and crispy and cooked through. Test with a fork or a pointed knife.
