Home Fries
Home fries are delicious crispy skillet fried potatoes typically served as a breakfast food in both the US and in the UK. Of course, home fries don’t have to be for breakfast only. They’re a good substitute for French fries, or serve them with a ham steak for dinner.
6 large potatoes (Russett, Yukon gold or red potatoes work best)
1 green pepper, chopped (optional)
1 onion, chopped
1/2 cup of fresh parsley, chopped
salt and pepper
3 tbs. butter
To prepare the potatoes, either cut them into thin slices or diced them into small squares. Melt butter in a large cast iron frying pan over a medium heat, add potatoes, peppers (if using), onions, and salt and pepper. Fry, turning the potatoes so that they do not burn. Cook for about 20 min. until a nice crust is formed on the potatoes and the potatoes are cooked.
Note: leftover cooked potatoes which have been refrigerated overnight can also be used.
Variation: instead of the green pepper and onion for flavor, try rosemary. I had these at Green Eggs Café in South Philly this way and they were delicious. Their house potatoes did have pepper and onion in them..
