Mashed Sweet Potatoes with Brown Sage Butter

4 sweet potatoes
3 Tbsp. butter
8 to 10 fresh (2 to 3-inch) sage leaves, stacked and cut across into ¼-inch strips

Pierce the sweet potatoes with a fork and bake in the oven until cooked through, about 1 hour or more depending on size. The juices of the potatoes should be starting to trickle out and turn brown.

Scoop the flesh into a bowl, then mash with 1 tablespoon of the butter. Place in warm serving dish.

Brown the remaining 2 tablespoons of butter in a skillet, then add the sage leaves and fry until crisp. Drizzle over the sweet potatoes and serve.
