Jane's Microwave Twice Baked Potatoes
May be made in large batches, frozen, and microwaved for a quick side
dish.
4 medium baking potatoes
1/2 cup sour cream or milk (or mix half and half)
2 tablespoons butter or margarine
2 tablespoon chives or green onion tops
1/4 teaspoon salt
dash of pepper
1/2 cup grated Cheddar cheese
2 tablespoons fried bacon bits
Wash and pierce the surface of potatoes. Microwave on High for 12 to
14 minutes. Wrap in foil and allow to stand 5 minutes.
Cut each potato in half length-wise and scoop out inside, being careful
not to break the shells.
Mash potatoes. Add sour cream/milk, butter, chives, salt and pepper.
Beat until smooth and fluffy. Cheese and bacon may be added to the mix
or sprinkled on top. Spoon generously into potato shells.
Potatoes maybe frozen for later use at this point. Place, not touching,
on cookie sheets and place in freezer. When frozen, may be placed in
plastic bags for storing in freezer.
To serve, Microwave thawed potatoes for 3 to 4 minutes on High or until
heated through.
Tip: For firmer shells, microwave emptied shells for 2 minutes.
