Deep Fried Summer Squash
Mom used to make fried summer squash. It was always a nice treat.
Yellow summer squash
Beer batter
Corn oil, for frying
Choose young summer squash with soft skins for this. Zucchini also works well.
Slice the summer squash crosswise into 1/4 inch slices. Place paper towels on a wire rack and set on a cookie sheet. Heat 1/2 inch of oil in a deep cast iron skillet over medium heat until it reaches 350° F. Dip the slices of squash in the batter and fry until golden brown, flipping so both sides get brown. Drain on paper towels. Keep warm in a 200° F. oven.
