Beef Roulade
Mom's recipe

Mom made this to serve as an appetizer one year. I have made it once or twice since. It is quite good, just a bit of work.

1 egg, beaten
1/2 cup fresh breadcrumbs
1/4 cup catsup
1/6 cup chopped fresh parsley
1/4 tsp. basil
1/8 tsp. oregano
1/8 tsp. pepper
1 clove garlic, minced
1 pound ground beef round

Aluminum foil
Extra bread crumbs
1/3 - 1/2 pound ham slices
1/2 pound shredded Swiss cheese
Mustard Sauce, for serving

Preheat oven to 350 degrees F.

Mix all the ingredients, through the ground round, together until they form a ball.

On a sheet of aluminum roll large enough to wrap the roll (at least 12" x 20"), sprinkle bread crumbs so that it cover a 9" x 12" rectangle. Pat out the meat mixture on top of the bread crumbs and shape into a 9" x 12" rectangle. Arrange the ham slices on top to 1/2 " of the edges. Sprinkle with the shredded Swiss cheese. Roll up and seal all edges of the meat, including the ends so that the cheese doesn't melt out. Seal in the foil - you may need to use more aluminum foil.

Place on a sheet pan and bake for 50 minutes. Open the foil and bake about 10 minutes more until browned.

Let cool for about an hour. Rewrap in the foil and refrigerate ovenight to marry the flavors.

To serve, cut 1/3 inch slices crosswise. Serve at room temperature with Mustard Sauce.
