Breakfast Burritos
Breakfast burritos offer all the advantages of a hearty, warm breakfast but have the added benefit of on-the-go portability. The classic version, made with scrambled eggs, beans, cheese, salsa and sour cream, is hard to beat, but it's just one way to bundle your breakfast. The options for customizing breakfast burritos are limitless.

4. Eggs, spinach, and cheese
5. Eggs, ham, and canned green chilis
6. Eggs, beef with taco seasonings, shredded cheese, refried beans, and salsa
Ingredient Options:
Scrambled or other cooked egg
Fried Mexican chorizo, Taco meat, crisp bacon, sausage or ham
Diced boiled potato, or fried potatoes w/ onion and green pepper, seasoned w/ oregano
Cooked Mexican flavored black beans (oregano, chili powder, and cumin), or refried beans
Grated Monterey Jack, Cheddar or other cheese
Sliced avocado
Fresh spinach
Salsa
Canned green chilis
Chipotle crema
Warm the tortillas. Place scrambled eggs downs the center of a tortilla and top with chorizo, potatoes, and/or beans. Sprinkle on some grated cheeese, avocado, if using, and some salsa or canned green chilis.
Fold the two ends of the tortilla in, then roll up so that the entire burrito is sealed.
Make Ahead Tip - Assemble the burritos and roll up on aluminum foil if reheating in the oven, or plastic wrap is microwaving them, then freeze. When ready to eat, defrost and heat in a 400 degree oven for 10 - 12 minutes. Or to microwave, remove defrosted burrito from the plastic wrap and cover with a paper towel. Microwave on High 2 minutes 30 seconds or until warmed through, turning burrito over halfway through heating. Although not an option at work, after microwaving to heat through, they could be fried in a pan to crisp.
Note: If freezing burritos, avoid ingredients that will make the burrito soggy.
