Lime Cilantro Chutney

Cilantro chutney, also known as coriander chutney, is simply a staple condiment for a lot of Indian food. You may have seen it served with papadum or samosa at a restaurant. It also makes a great sandwich spread and is a key component of a variety of Indian street food. There's no right way to make it. It is often also made with additional ingredients such as mint, cumin and ginger and can be made as thin or thick as you want depending on how you use it.

80g (1 cup) fresh coriander including stalks
2-4 hot green chillies
Juice and zest of 1 lime
2 tsp sugar
1 tsp salt
1 clove garlic

Blend all of the ingredients in a food processor to create a fine puree, using a little water if necessary.
