Chicken Focaccia Sandwiches
from http://busycooks.about.com
"This sandwich is a bit of a twist. Instead of a hot filling on a bun, it's a cold filling in hot bread. The bread is made from pizza dough, topped with oil, garlic, and herbs like focaccia. This recipe is so delicious you can serve it to company. The combination of textures and flavors is really wonderful."
For the bread:
1 can refrigerated pizza dough (or homemade pizza dough)
2 cloves minced garlic
2 Tbsp. olive oil
1 tsp. dried tarragon leaves
For the sandwich filling:
12 oz. canned chicken, well drained, the equivalent of cooked chicken
1/3 cup mayonnaise
2 Tbsp. honey dijon mustard
2 Tbsp. plain yogurt
1/2 cup grated carrot
2 stalks celery, chopped
1 tsp. dried tarragon leaves
1 avocado, peeled and chopped
Unroll pizza dough and place on greased cookie sheet. Cut into 4 pieces crosswise. [The pieces should be about 3" wide and twice as long as far as I can tell from the picture which is quite small.]
Combine garlic, olive oil and the dried tarragon in small bowl. Spoon half of this mixture over pizza dough pieces. Fold each dough piece in half, starting with short side. Press surface with fingers to dimple. Spoon remaining garlic mixture over folded dough pieces.
Bake at 350 degrees for 15 to 20 minutes until light golden brown.
Meanwhile, combine the sandwich filling ingredients in small bowl.
When focaccia is done, remove from oven, let cool slightly, then gently pull each apart to split in half and fill with chicken salad mixture. Eat while still warm.
