Uncle Donnie's Kettle of Chowder

This is the chowder that Uncle Donnie and his fellow firemen made at the Fire House. They would serve this for large functions. The recipe makes about 18 gallons of chowder! Aunt Helen came up with a smaller home version.

20# chicken
5# beef [stew beef?]
1 cup salt
1/2 cup pepper
4 bunches celery
2 heads cabbage, ground
6# onions, ground
1 bunch parsley
2 large cans tomatoes
2 large cans corn
2 large cans peas
2 large cans carrots
3 small cans lima beans
20# potatoes

Cook the chicken, beef, salt and pepper in water. When cooked (recipe doesn't say how long - probably 2 to 3 hours until the beef is tender), save the broth and trim and cut the meat. Grind the chicken skin. Set aside.

To the broth, add the celery, cabbage, onions and parsley and cook until done.

Add the meat, ground chicken skin, cans of vegetables and the potatoes. Cook until the potatoes are done. Simmer to mingle flavors.

Total cooking time: 5 hours
