Uncle Donnie's Chowder

This is Aunt Helen's smaller home version of the Kettle of Chowder Uncle Donnie made at the Fire House. Note: Uncle Donnie also adds ground cabbage to his and uses whole chickens, which includes white meat. He also uses cubed beef instead of hamburger.

6 chicken thighs
1 pound hamburger, browned and drained
salt and pepper
1 pound potatoes, diced
2 onions, ground
4 stalks celery, ground
1/2 can carrots
1/2 can lima beans
1/2 can corn
1/2 can peas
1 can crushed tomatoes
1/4 cup fresh parsley, chopped

Cook the chicken and beef in water with the salt and pepper. Remove the chicken and trim the meat from the bones. Chop and place back in the broth with the beef. Add the potatoes, onions, and celery and cook until the potatoes are done. Add the rest of the vegetables and simmer 1 1/2 hours to mingle the flavors.
