Summer Luncheon Salads
These salads are good options when the summer heat arrives and you want something light to eat.

Stuffed Tomato Salad
An easy and nice lunch in the summer can be made from fresh tomatoes stuffed with any number of salads. Just make Tomato "Flowers" and stuff with one of these suggested fillings:
Tuna Fish Salad
Chicken Salad
Cottage Cheese - sprinkle with chopped fresh chives or snipped fresh dill
Salmon & Chickpea Salad
Tuscan-Style Tuna Salad
Tabbouleh (salad made from bulgur, oil, lemon juice and fresh herbs
There are many other salad-type fillings that would work equally well.

Cottage Cheese & Pineapple
Mom used to make these salads and the Texas Hot in Wellsville, NY had them on their menu. These salads were popular in the 1950s.
Place cottage cheese on a lettuce leaf and canned pineapple rings alongside. Canned peaches were also often used, as was a Marachino cherry garnish.

The Iceberg Wedge
This salad was popular in the 1950s and 1960s when iceberg lettuce was the principle lettuce sold in grocery isles. It was commonly found on steak house menus. The lettuce wedge lost its place in the 1970s when consumers were intrigued by more interesting salads. Recently, the iceberg wedge salad has resurfaced as a "reinvented" item on trendy menus.

Mom's Macaroni Salad w/ tuna fish
Mom often added canned tuna fish to her macaroni salad which makes it perfect for a luncheon salad. Serve slices of fresh tomatoes alongside.

Shrimp Pasta Salad
Shrimp Pasta Salad is basically a traditional macaroni salad (although I do not add eggs) to which cooked shrimp has been added. Let it sit in the refrigerator for a few hours to let the flavors marry.
I like to use the small pasta shells for this. Radishes accent the shrimp nicely.

Taco Salad
Taco Salad can be made in a fancy taco shell (as pictured) or simply over a bed of taco chips.

Hiyashi Chuka (Cold Ramen)
Hiyashi Chuka is one of the best parts of summer in Japan. It is a dish of cold ramen noodles with a chilled tare sauce (Japanese flavored dipping sauce made with soy sauce, rice vinegar and a touch of sugar) and vibrant toppings. Characterized by pale yellow ramen noodles and colorful toppings of sliced ham, cucumbers, and fried eggs, this seasonal dish has become a culinary icon for the Japanese summer.
This dish of chilled ramen noodles and refreshing toppings has spread throughout Japan, becoming one of the most popular dishes to eat during the hot summer months.
