*Baked Salmon or Tuna Steaks
Any type of fish steak works well with this recipe: salmon, tuna, steelhead trout, swordfish... These steaks are also good broiled or cooked outside on the grill. If grilling, place on aluminum foil to keep the butter and juices from running down into the coals.
2 fresh salmon or tuna steaks, about 1 inch thick
salt and pepper
4 Tbsp. of butter, melted
2 Tbsp. fresh squeezed lemon juice
1 Tbsp. fresh parsley, chopped
1 clove garlic, minced
Lemon wedges, for serving
Rub the steaks on both sides with salt and pepper. Place them in a shallow baking pan. Mix the melted butter with the lemon juice, parsley and garlic. Pour over the steaks. If grilling or broiling, save some of the butter mixture for basting.
Bake in a 350° oven until done, about 30 - 40 minutes for 1" thick steaks until the fish is opaque and the edges start to caramelize. The meat will be flaky. It will take much less time if broiling or grilling. Be careful not to overcook or the fish will be dry. Serve with lemon wedges.
Good side dishes would be Dill Potato Wedges and a green salad, or Pine Nut Lemon Rice and Steamed Asparagus. If the fish is salmon, Asparagus w/ Hollandaise Sauce would be an excellent side because Hollandaise Sauce goes especially well with salmon. Mom's Criss Cross Potatoes would complete the meal.
