The Lore of Cooking is the cookbook Mom typed up and wanted to give copies to everyone in the family. As with anything we humans do, she was contantly making changes. Several typed pages had changes made in pencil, and when she died, she had the book spread across her living room as though she was rethinking the ordering of pages and chapters, etc. I tried to capture her intentions in the cookbook by ordering the chapers and pages given any hints I found while reconstructing the book. Some pages in the different sections were numbered in very light pencil, which was a help, and there were clues to the ordering of the different sections or chapters of the book.

I hope you enjoy looking through her recipes and trying them out as much as I do. There are many of them that I have always made following the instructions she gave me as a child when helping her cook and bake, then copying the recipes to take with me as I made my life on my own. For me, many are jewels from my childhood, and other recipes for the same dish just don't taste the same.

So to begin "The Lore of Cooking," here is the Introduction she typed up for her book.
(above written by her daughter, Faith Gielow)

INTRODUCTION

The word, "lore," means the body of knowledge on a particular subject.

It is extremely helpful to have a little knowledge, or lore, of cooking before attempting to prepare dishes from recipes or to concoct your own.

This book's intent is not to make you a gourmet cook, but to help those of you who are trying to satisfy your hungry families with wholesome, nutritious and appetizing meals on a moderate budget, but feel lost when attempting to do so. Another intent is to introduce you to the pleasure that can be derived from doing so, instead of mistakenly thinking that cooking is a boring and monotonous job.

The articles in this book and the recipes in the recipe section are written in the briefest manner possible so as not to be boring or time consuming, without sacrificing any important aspects. The recipes are written in a form which is easy to follow. The ingredients are written in bold print. Before beginning to prepare the recipe, check the ingredients to make sure that you have them handy.

Please read and retain the information in the following articles, for if you want to feed your family properly you must be informed on these subjects.

There is an article on "Nutrition" because a majority of people in our country, with a wide variety and abundance of food, do not eat properly to have and maintain good health. Too much fat and animal products are ingested and not enough grains, fruits, and vegetables.

"Food Poisoning" information is included in this book. Hopefully, the article will help save some discomfort and illness, or even life.

The articles on food additives and "Lite" products may spur some to voice their opinions to our governmental representatives.

"Alcohol in Cooking" should put one at ease concerning the alcohol content, or lack of it, in prepared food. It may also introduce some cooks to the enhancement of taste in the finished cooked product.

Please do not forget to add "Eye Appeal" to your dishes.

Hopefully, the article on "Utensils" will save you some cash and help add to your enjoyment of preparing meals for your family - which they will think are fabulous.
